Each email shows its From, To, Cc, Date and Subject headers, the message body and its attachments. Images from the internet can be switched off so senders cannot tell you opened the email.
Everything runs on your device, so the emails are never uploaded. Converting each email to its own PDF is free, with no sign-up. Paid plans add bulk export: a ZIP of all PDFs, one merged PDF sorted by date with a contents page and page numbers, and a ZIP of all attachments.
